Guest guest Posted November 27, 2005 Report Share Posted November 27, 2005 I just found an old Wagner cast iron 8 inch pan in almost mint condition for $2.00 last weekend at a new thrift shop in the area. It looks like a very old pan from the shape, etc. not sure but I was so excited. I LOVE those pans, you are correct. A well seasoned cast iron pan beats teflon or any of those non-stick possibly dangerous pans any old day! Also, I got one that was preseasoned...it still had to be repeatedly seasoned. Run a fan while the pan is in the oven since it can create a lot of smoke. You just basically heavily grease them, vegetable shortening (not oil) will do just fine, put them into the oven, but can't recall the temp (if it isn't on the pan, google it) and let it bake..the directions should tell you how long, couple of hours anyway. You let it cool and repeat and repeat and repeat. After seasoning and forever only gently wash out with hot water, no scrubber, and many use no soap. I have stopped using soap now too. If you fill a well seasoned pan, as soon as it is not too hot, with hot water and let it sit for maybe 5-10 minutes it will clean up wonderfully. Don't cook anything acidic in it until after you have used it for a few months, like tomato sauce. It will ruin the seasoning. Re-season the pan if you get some spots showing through...you can tell when you see it. Either towel dry the pan, just wiping it or put it on the stove burner and dry it that way. With a new one, even after seasoning, I spray it with a liquid oil or rub it with a vegetable shortening after every use. Mine are so well seasoned now I don't need to do that anymore. One pan I have is probably 30 years old. The newest one a couple of years and I no longer have to oil it in between uses.
