That's why I was so happy to discover home-made seitan using wheat gluten. You can make your own versions of ch!ck#n, s@*s@ge, etc. using diff. spices and ratios of water to gluten (for diff. textures). Search on seitan in the messages to find some links I posted to recipes which I have tried with success. (Maybe we should get them into the Links section of this group to make finding them easier.)
