Split Pea Soup With Dumplings

I remember I promised I'd ask about posting the following recipe:

permission to circulate in this way.

 

SPLIT PEA SOUP (Vegan if soymilk is used)

 

(from Cooking Vegetarian)

 

8 cups of vegtable stock

1 Tbsp of oil

1 cup diced carrot (a little more or less doesn't matter)

1 cup diced celery

1/2 an onion

2 cloves of garlic, minced

2 cups yellow split peas (or green if you prefer) [i use yellow -ps]

3 bay leaves

5 whole cloves (I tend to put a sprinkle of ground instead [likewise - ps])

1/4 to 1/2 tsp salt [skip if stock is salty - ps]

1/8 tsp black pepper

3 slices of Yves Veggie Back Bacon [i omit - ps]

1 tbsp fresh parsley

 

Saute carrots, celery, onion and garlic in the oil (use stock instead of oil if

you don't use

added fat) for 5 min. Stir in stock, split peas, bay leaves and cloves. Bring to

boil, cover,

reduce heat ad simmer for 45 to 60 mins. Add salt, pepper, Veggie Back Bacon adn

more

water if soup is too thick.

 

Remove Bay leaves before serving. Garnics with parsley, adjust seasoning.

 

Dumplings

 

1 Cup Flour

2 tsp baking powder

1/2 tsp sugar

1/2 tsp salt

1 Tbsp chopped fresh parsley (or 1 tsp dried)

Stir in slowly 1/2 cup of milk. [i use soymilk; I find I need, in any case, a

little more - PS]

 

Do not over mix or the dumplings will be tough. Only use enough milk to take up

by

rounded tablespoons (wet spoon for ease).

 

Place dumplings on gently boiling soup/stew. They should rest on veggies

(although it

seems to work ok on a thick soup).

 

Cook uncovered 10mins and covered another 10mins.

In the UNauthorized version, of course - I put

in, well, er, a bunch more. I also put in more

cloves sometimes. Grreat stuff. Verrrry

versatile.

 

I will defend the use of garlic to my last breath
