Guest guest
I just bought a bunch of beets (complete with their greens). I understand the red pigment is really good for you! So... What do I do with them? LOL. Thanks, -Erin
Guest guest
I like to peel them, grate raw and use on top of salads or make a raw beet salad with chopped cabbage, onions and a little veganaise cronzen <truepatriot wrote: I just bought a bunch of beets (complete with their greens). Guest guest
I like to saute the beets and greens with gahhhhhlick, olive oil and a little butter for consistency! I usually only eat the greens, I CANNOT stand the actual beet! I am trying to get to like them! I had a babysitter that swore that beets were great for my eczema. She made me eat beets 3x daily! My ezcema never improved! I am scarred and traumatzed for life, I have nightmares! LOL!!!! Guest guest
I do not know if I have posted this link before but it's a must check out. I have tried all but the beet cocktail and the two ones with spaghetti. They also have other categories. This site is a favorite of mine. I almost always add other veggies i have laying around, like sweet potatos, carrots and parsnips go well in the roast one. http://www.all-creatures.org/recipes/beets.html --- cronzen <truepatriot wrote: > I just bought a bunch of beets (complete with their > greens). > I understand the red pigment is really good for you! > > > So... Guest guest
Thank you all for the beet suggestions. The bunch I got had three big beets with their greens. The first time I steamed one of them along with some greens. The beet greens were delicious, almost buttery. The beet itself was rather tasteless, so I tried a few different spice toppings on separate slices. I tried dill, garlic and basil, and chipotle powder. This chipotle was the best. Tonight I roasted the second beet with some butternut squash, brussels sprouts, onions, and garlic. Yummy! (Also had a little raw, which was good too). For the last beet, I might try stir- frying it with something or searing it in a pan. But, the roasted veggie medley is definitely something I'll repeat (every veggie is good roasted!) and the greens are delicious. Thanks again, -Erin
