Miso thanks Amy

I just printed my booklet. I have never kept it longer than a month and I

usually freeze it up in small portions. I don't need to worry about that now.

I wonder if freezing it kills the bacteria that ferment it? Hmmm... I

guess not though - it dosn't kill bread yeast? Anyway, now you don't

have to freeze it anyway.

I have asked in the Asian markets and they always say to use it within

a month. I guess they don't know about this either.

I know if I freeze it the flavor isn't altered, I

ve done this for years.

Thanks for the info! I've been trying to set aside time to freeze my miso in

small amounts. Now, I don't have to! For once, procastrination is good.
