Guest guest Posted December 6, 2005 Report Share Posted December 6, 2005 This is a power packed good salad Ancient Grain Salad 1/4 cup bulgur 1/4 cup millet 1/4 cup quinoa (rinse well in a mesh strainer) 1/4 cup dried cranberries, blueberries or raisins 1/2 cup chopped parsley or cilantro 1/4 cup celery chopped 1/4 cup onion chopped (optional, I used it) 1/4 cup sweet red pepper chopped 1/4 cup apple peeled and chopped (I used a Gala apple) ~~~~~~~~~~ Dressing ~~~~~~~~~~ 2 tblspns. lemon juice 2 tblspns. garlic minced 2 tsps. Dijon mustard Juice from cranberries 1/4 tsp. salt pepper to taste In large bowl pour 1 cup boiling water over bulgar,cover and let stand 30 mins. fluff with a fork. Meanwhile in saucepan, bring 1 1/2 cups water to a boil, add millet and reduce heat to medium. Cover and simmer for 5 mins. Add quinoa to millet and continue simmering for 10 to 12 mins. until water is absorbed. In small saucepan bring 1/2 cup water to a boil and add the cranberries and boil for 4 mins.. Reduce water to 1/4 cup, drain but reserve water for dressing. Add millet, quinoa, parsley, celery, onion, red pepper, apple and cranberries to the bulgur. Mix well. Whisk together the dressing ingredients and toss with the grain salad and add pepper to taste. This can be served room temp. or cold. It makes a nice buffet salad.
