recipe rescue??

I tried a new recipe today... supposed to be a cross between a brownie

& a muffin... anyway, major major flop!!! The outsides are burned and

the middles are gooey. (And yes, I used the temp specified, and the

temp is right based on my oven thermometer.)

 

I did sub Ener-G for the 4 eggs (it made 1 dozen muffins) - does

subbing this many cause problems?? I've only ever subbed for 1 or 2

and didn't expect a problem, but it's the only thing I did different

from the recipe, and I expected a better result from the recipe

source! Supposed to be chocolate brownie muffins with mint chips put

in the middle. Allthe mint chips sank to the bottom of the muffin cups

and are solid.

 

In any case, is there anything I can do with the gooey centers - scoop

them into a bowl and do what?? They actually taste all right, but the

sides are too firm to scrape out and are desperately stuck to the

papers, and the top " corners " are burned and taste like it. :-(

 

So much for surprising DH!

scoop the insides onto ice cream, or fresh fruit???

Ah ha... I have a couple of pears I can use!! The mint chips all sank

to the bottom so I can scoop out the insides without the mint (which

as much as I like it might not go with pears...)... :-) Thanks, Jen!

I mean if it tastes good.. by all means... rescue that chocolatey

goodness! tee hee!

 

he'll never know ... he'll be happy with whatever you come up with ! =)

*lol* I didn't want to throw the entire thing away! Thank goodness

for this group - I was so stuck on the fact that it didn't work (which

hasn't happened to me in a long time) that I couldn't think of a thing!
