Guest guest Posted December 12, 2005 Report Share Posted December 12, 2005 from Martha Stewart's website. made for lunch today and it's very yummy : )....... 4 lg portobello mushrooms, stemmed 1 tbsp olive oil coarse salt/ pepper 1 ripe avocado, peeled, pitted and coarsely chopped 1 tbsp spicy brown mustard 1 tbsp horseradish 1 tbsp fresh lemon juice 1 jalapeno, finely chopped 4 soft hamburger buns, split 1. preheat oven 425 degrees. on large rimmed baking sheet, toss mushrooms with oil and 2/3 c. water; season with salt and pepper. arrange stemmed side down; cover loosely with foil. roast till tender, 30-45 minutes. 2. in medium bowl, mash avocado with fork. stir in mustard, horseradish, and lemon juice. fold in jalapeno; season with salt/pepper. 3. toast buns and divide mushrooms and sauce evenly over. ** I also put a slice of provolone on and broiled it. ran out of time but would have liked to added caramelized onions on also. mushrooms took a lot less time than recipe stated so watch carefully : )** Anne Quote Link to comment Share on other sites More sharing options...
