HEY!!!!

watch what ya say bout my beets!

Evenmy 8 year old eats them.

I use a touch of garlic powder, and touch of sweetener, maple syrup if I have

it, or last resort, organic sugar, and I fry them in some good margarine. They

are a gorgeous vegetable when cooked, the color is beautiful.

I'm always looking for recipes for greens (collard, kale) I got some

good suggestions last month...um fresh beets? how to make them so they

---my vote for vegetables without a clue to prepare are:

 

kohlrabi

sunchokes

artichokes

celery root

endive, radicchio, and escarole

 

I have since becoming a vegetarian figured out: bok choy, beets, swiss

chard, and greens : ).

I like celery root just boiled and riced...

endive I eat raw mostly, but I know you can cook it too. Same for

radicchio, mostly raw, but sometimes grilled (yum!). Not sure I've

tried escarole.
