Hi all,

I understand there are some mushrooms that should not

be eaten raw, only cooked. Does anyone know more about

this? Which mushrooms are safe to eat raw and which

must be cooked first?

Thanks,

-Erin

Hi Erin,

I have read that *all* mushrooms should be eaten cooked, because of

carcinogens that will work their poison in raw 'shrooms. I'm sorry to say I

cannot recall where I read this, but I think it was even in something like

Family Circle magazine...

HTH somewhat,

All of the nutrition books by Andrew Weil (my favorite health book

author) say that raw mushrooms are not advised. like you said-

because of toxins. i don't think a little is a big deal, but not

good to make it part of your regular diet.

I like them cooked too. Doesn't taste like the same thing when they

are raw.
