Root Vegetable Salad recipe Anne you will like this one

This is a very refreshing.

 

" Celery Root Salad "

 

1/2 cup vegan or regular mayonnaise

2 Tblpsns. Dijon mustard

1 Tblspn. lemon juice

2 Tblspns. chopped parsley

1 celery root, quartered, peeled and coarsely grated

1/2 cup broccoli stalks, coarsely grated

1/2 Granny Smith apple, peeled and chopped

salt and pepper

 

Combine mayo, mustard, lemon juice and parsley in a medium bowl.

Fold in celery root, broccoli stalks, apple and salt & pepper to taste.

This is a delicious slaw minus the cabbage.

 

Note: I add chopped walnuts when served.

--- this does look really good : ). I like the broccoli stems better

than their crowns--go figure : ). thanks for recipe. we are attempting

to get out to store for some mushrooms and few other ingredients to

make chowder for lunch. I figure 2 1/2 hrs of heavy shoveling of 8 "

wet snow deserves good chowder today : ). plus kids need new sled and

we will pick up a few items to make a patriotic snowman for hubby who

will be here in a week : ). take care : )...........

Is celery root the same as celeriac? None of the celery in the shops

here has roots attached.
