Guest guest Posted December 18, 2005 Report Share Posted December 18, 2005 my holiday baking has begun. i made these today and they look festive. i got the recipe off www.landolakes.com. these cookies ended up being kind of expensive after buying the candied cherries (red and green) and the pecans. they taste good, but are very very sweet. you can cut the amount of coconut in half and even that won't stick to the cookies. SANTA'S WHISKERS This slice and bake cookie filled with cherries and pecans is rolled in coconut. The cookie's name has been passed down through generations of bakers. Preparation 40 min. Baking 10 min. 1 cup LAND O LAKES® Butter, softened 1/2 cup sugar 1/2 cup powdered sugar 1 egg 1 teaspoon vanilla 2 1/4 cups all-purpose flour 1 1/2 cups red and/or green candied cherries, chopped 1 tablespoon all-purpose flour 1 cup coarsely chopped pecans 3 cups sweetened flaked coconut Combine butter, sugar, powdered sugar, egg and vanilla in large bowl. Beat at medium speed, scraping bowl often, until creamy. Reduce speed to low; add 2 1/4 cups flour. Continue beating until well mixed. Combine cherries and 1 tablespoon flour in small bowl; toss to coat. Stir cherry mixture and pecans into dough by hand. Shape dough into 3 (10x1 1/2-inch) logs on plastic food wrap. Roll each in 1 cup coconut. Wrap tightly. Refrigerate until firm (1 hour or overnight). Heat oven to 350°F. Cut logs into 1/4-inch slices with sharp knife. Place 1 inch apart onto ungreased cookie sheets. Bake for 10 to 13 minutes or until edges are very lightly browned.. Guest guest Posted December 18, 2005 Report Share Posted December 18, 2005 hmmm... always one to alter a recipe, I wonder how these would be without the egg, and instead of candied cherries, using craisins , and any chopped nut.. pecans, walnuts, almonds?? of course, I'd use a cup of earthbalance .. probably the sticks, to make it vegan... interesting cookie... =) I think I'll be doing more baking this week!!! =) happy holidays everyone! Here are a few ideas for replacing the eggs: For one egg, mix 1 Tbs ground golden flaxseed with 3 Tbs water and 1 tsp soy lecithin. Mix in food processor until frothy. You can also substitute an egg with 1/4 Tbs tofu. Guest guest Posted December 22, 2005 Report Share Posted December 22, 2005 I always use flax meal and water.. never bother with the soy lecithin.. although, I've found recipes that call for only one egg , generally don't need any. and the cookie recipe seems to have enough margarine that would hold it together... although, the flax will add a nice touch. I made sugar cookies for our playgroup holiday party... I rolled them and baked, adn the kids decorated...
