Guest guest Posted December 22, 2005 Report Share Posted December 22, 2005 My recipe candy dessert for the season. My friend adds coffee to hers but I don't remember how she did it. Truffles La Vegan 3/4 cup raw cashews 3/4 cup cold water 1 lb. bittersweet chocolate Cocoa Powder Place the cashews and cold water in a blender and blend on high for about 2 minutes. Scrap the sides down and blend again until mixture is of a heavy cream consistency. Meanwhile in a double boiler heat the chocolate until it's all melted. I usually do this in the microwave in a large pyrex measuring cup. Cool chocolate to a degree you can work with. Fold in the cashew cream making sure not to stir fast or you will have bubbles in the mixture. Take out a small ball, roll in cocoa powder. Fill up containers with the truffles. Now, if only somebody would invent a soy milk chocolate...I LOVE milk chocolate and it's hard to give it up. I only tolerate semisweet chocolate...does anybody know of a soy " milk chocolate " ? I could chop it up and make choc. chip cookies, which would be just wonderful. But I'll sure try this recipe, thanks lily!
