First the inspiration from A Celebration Of Wellness: Sweet Oatmeal Corn Muffins blend: 1 lb soft tofu 1/2 C orange juice 1 tsp vanilla extract 1/4 C honey 1 banana sift: 1 Tbl baking powder 1 tsp baking soda 1 C corn flour stir: 1 1/3 C rolled oats 1 C softened raisins or dried apricots (optional) Add wet mixture to dry ingredients and spoon into oiled muffin tins. Bake at 375 F for 20 minutes or until toothpick comes out clean. Serve with butter or jam. Makes 1 dozen. Now, for my invention, which is not so sweet. I think I might make it with more of the above next time, but I was aiming to keep the calories as low as possible. Cranberry/Jalapeno/Oatmeal Corn Muffins in bowl #1 mix: 1 C cornmeal (I like the coarse grain) 1 1/2 C oatmeal 1 tsp baking soda 1 Tb baking powder in bowl #2 mix: 1 C orange juice 1/2 C yogurt finely dice 1 deseeded jalapeno roughly chop 1/2 C fresh cranberries Add wet mixture to dry ingredients, then stir in cranberries and jalapenos. Spoon into oiled muffin tins or similarly prepared 9x9 baking dish. Bake at 375 F for 20 minutes or until toothpick comes out clean. I like crispy tops, so I go for a longer bake. Actually, I often bake for recommended time, then individually bake directly on the rack what I'm going to eat to get it nice and browned. Serve with butter.
