I have printed a huge stack of recipes from the files and will be cooking up some soon, but I don't have any vegetarian cookbooks of my own, just a few I use like Betty Crocker and a few books that friends have lent me. One of my all-time favorites, which I've mentioned in the past, is A Celebration Of Wellness, by James Levin, M.D. and Natalie Cederquist. It is a simple, low fat, vegan cookbook. The one drawback MAY be that it doesn't have pictures. If you prefer pictures, at least at this beginning stage of your vegetarianism, The Essential Vegetarian Cookbook is an absolutely gorgeous book full of inspiration. It is, however, not low fat. You may also want to try the used bookstore at the library and see what kind of cookbooks they have. Illustrations are beautiful and the book is filled with new idea recipes..I haven't tried any of them yet. I am facinated by a recipe for Ricotta and herb dumplings. PS I see Vegan recipes also in this beautiful book. I love cookbooks and when my kids where little and I was a stay at home mom I used to love going to the library and checking out cookbooks.
