Herbs de Provence Lentil Salad 1 1/2 cups green or brown lentils 3 cups vegetable broth 3 cups water 1 garlic clove squeezed 1 carrot peeled and diced 2 stalks celery chopped 1 tsp. herbs de provence (recipe from our files below) 1 bay leaf 1 pint of cherry tomatoes 4 green onions, chopped (include the tops) 1 tblspn. chopped fresh parsley 1 tblspn. capers, chopped 1/2 cup crumbled feta cheese (optional) mixed salad greens Dressing ~~~~~~~ 1/2 cup extra virgin olive oil 2 tblspns. fresh lemon juice 1 or 2 tsps. Dijon mustard salt and pepper to taste Rinse lentils and place in large saucepan, add broth, water, garlic, herbs de provence, carrots, celery and bay leaf. Bring to a boil and turn heat to a simmer and simmer for 25 to 35 minutes uncovered until lentils are done but not mushy. Drain and cool. Remove the bay leaf. Mix in the green onions, parsley and capers. Whisk together the dressing ingredients, add to the lentils and mix gently. To serve place greens in salad bowls and serve lentils in the center. Garnish with cherry tomatoes and feta cheese. Herbs de Provence 1 teaspoon thyme 1 teaspoon savory 1/2 teaspoon lavender 1/4 teaspoon rosemary 1/2 teaspoon oregano or basil 1/4 teaspoon sage Herbs de Provence is best made with dried herbs as fresh herbs lose their flavor if the cooking is longer than about 20 minutes. This blend is excellent in soups, on potatoes, rice, pasta, popcorn, roasted vegetables or bread. Photos Ring in the New Year with Photo Calendars. Add photos, events, holidays, whatever. I will be looking in the spice isle tonight when I finally make it to the store.
