Request: sauerkraut and cranberry sauce sandwich spread

I printed your request and I will look through my cookbooks for you.

That's the good thing about posting our recipes, we have them here in the

file. This has certainly happened to me many a time,

Chupa - I found this, which has the cranberry sauce, sauerkraut and

chili sauce... but it actually calls for ground chuck?? Perhaps you

just made an adaptation yourself with tvp or soybeef crumbles?

Anyway, it's the closest I could find. I would think if you left out

the bread curmbs, switched to nonbeef, and just mixed everything

together, you'd get something pretty close to your sandwich filling!

Crazy Meatballs

MAKES ABOUT 78 MEATBALLS

 

Meatballs:

 

2 pounds ground beef chuck

1 cup bread crumbs

1 (1.5-ounce) envelope onion soup mix

 

Sauce:

 

1(12-ounce) bottle chili sauce

1 cup brown sugar

1 (14-ounce) can sauerkraut, drained

1 (16-ounce) can whole berry cranberry sauce

 

1. Make meatballs: Place ground chuck, bread crumbs and onion soup mix

in a large mixing bowl. Mix until well-combined. Wet hands and roll a

small amount of the mixture between palms to form a 1-inch ball.

Repeat with remaining mixture and place meatballs into a large,

oven-proof pot or casserole dish and set aside.

 

2. For sauce: Pour chili sauce into a medium pot. Fill the entire

empty chili sauce bottle with water, cover and shake the bottle to

clean. Pour the contents of the bottle into the pot with the chili

sauce. Add brown sugar, sauerkraut and cranberry sauce to the pot and

stir to combine. Simmer over medium heat until warm. Pour over

reserved meatballs and bake, uncovered, in a preheated 350-degree oven

for 1 hour. Remove and serve hot.

PS I only posted this because it was all I could find (I looked

through my cookbooks too and didn't find anything veg). Please don't

make it with the actual meat, y'all... :-)

I've looked in so many books and I sure don't see your lost recipe. Hopefully

the one Sandy posted is close to it. Let us know.
