Guest guest Posted January 3, 2006 Report Share Posted January 3, 2006 My girfriends loved these scones. The recipe is from my cookbook Christmas gift, Teany Book by Moby and Kelly Tisdale. (He published a lovely book as well as his music). Hope the gang will try these, Mya Moby's Scones 1/4 cup sugar (or 1/3 cup Sucanat) I used sugar 1 teaspoon baking powder 1 cup pastry powder 1 cup soy milk (I used Vitasoy since it's thick) 1 1/2 tablespoons butter or vegan margarine 1 tablespoon maple syrup 1 apricot thinly sliced Preheat over to 325 F. Mix all dry ingredients in a large mixing bowl. In a small mixing bowl mix the margarine and soy milk. Add half the soy wet mixture to the dry mixture and blend well. Then add the other half as well as the sliced apricot, and mix well. Form five round scone shaped mounds on a non-stick cookie sheet. If you don't have a non-stick cookie sheet, grease and flour a regular one. Brush tops of scones with maple syrup and bake for 17 to 19 minutes. Tip: You can substitute other fruit if you like.
