Guest guest Posted January 8, 2006 Report Share Posted January 8, 2006 from Moosewood Simple Suppers. had this over Christmas break and it was very tasty : )..... 1/4 c. mayo (I used Vegannaise) 1 tbsp ketchup 2 tsp cider vinegar pinch salt black pepper to taste pinch sugar 8 thin slices of rye or pumpernickel bread, toasted 8 oz package coleslaw mix or 4 c. finely shredded cabbage 4 tomatoes, thinly sliced 8 oz thinly sliced Swiss cheese (I used much less) in bowl large enough to hold coleslaw mix, stir together the mayo, ketchup, vinegar, salt, pepper, and sugar. add coleslaw and mix well. assemble open-faced sandwiches on baking sheet. preheat broiler. arrange slices of bread an inch apart. place about 1/4 c. coleslaw on each slice and top with tomatoes and then cheese. broil sandwiches till cheese melts, 3-5 minutes. serve open-faced. ***they also suggest serving it with pickle spears, potato chips, and a milkshake*** ***other variations: use well-drained sauerkraut in place of coleslaw. add slices of seasoned baked tofu*** Anne Quote Link to comment Share on other sites More sharing options...

I think I would just leave off the vegan cheese, as there ain't none that tastes good around here. :>) But the tempeh sounds tasty. It's been a while as now I make them for myself (and don't use cheese... or often bread, for that matter, lol). Which isn't to say I don't eat bread. That's not true; I make my own sourdough rye. I just save it for a night-time snack, toasted and topped with some almond butter or tahini and a slice of apple. The rest of the apple I chop up and mix with yogurt and cinnamon. My nightly ritual.
