Guest guest Posted January 13, 2006 Report Share Posted January 13, 2006 West African Bean and Rice 1 large onion, chopped 2 cloves of garlic, minced 2 tablespoons tomato paste 1/4 cup olive oil 2 cans (15 ounce) white beans 2 cups water 1/4 teaspoon salt cayenne pepper to taste (I use 1/2 teaspoonful) 3 cups of steamed rice to go with dish. Heat oil in skillet and sauté garlic and onions on medium heat until onions are lightly browned, add tomato paste. Stir until paste has separated and mixture is a deep color. Stir and watch so it doesn't scorch. Takes about 15 minutes. Stir in bean juice and salt, and then add beans and one cup of the water. Simmer for 10 minutes. Stir occasionally. When mixture thickens, stir in the cayenne pepper to your taste, simmer a little longer until you have a thick sauce. Use some of the remaining water to adjust consistency. Spoon over steamed rice.
