Guest guest
Has anyone used agar to thicken salad dressings? We've used it successfully to make " jello " . Works fine.

I haven't used it in dressings, but I have used vegetable broth thickened with cornstarch in salad dressing. Pretty awesome.
Guest guest
Hey, Chupa - found this: " AGAR-AGAR Agar-agar is a natural vegetable " gelatin " product made from seaweed. It is sold in most natural foods stores, either as flakes or in powder form. Manufacturers use it to thicken salad dressings, and some ice creams, puddings, jellies and candies. You can also use it to jell liquids. Use 1 1/2 tablespoons of flakes or 3/4 teaspoon of powder to jell 1 cup of liquid. Use less to slightly thicken a homemade dressing. " But you'd need to bring the liquid part with the agar to a boil I think, and it would thicken when it cooled. (from http://www.drmcdougall.com/misc/2005nl/june/050600mary.htm - if you read the site, their data on Emes kosher gelatin is outdated - it's actually fish gelatin, and *not* veg)
Guest guest
Chupababi, I have not tried agar (agar agar) to thicken salad dressings, but have recently made a few recipes where ground flax seed was used for that purpose. from Maida Citizens for Pets in Condos, http://www.petsincondos.org South Florida Vegetarian Events, http://www.soflavegevents.net
