Veggie Loaf

Yeah - I've not had luck with veggie meats making a meat loaf. I use

lentils though and that works well & is tasty, nothing like meatloaf,

way better. I think there were a couple recipes for lentil loafs (or

would it be loaves) in the database..

One is mine! :) I have another that's a FABULOUS tofu loaf. Hated meat

loaf, but love the vegan versions. (The one on the side of the Nature's

Burger box is pretty good too. :))

I used it to make Swedish meatballs which turned out great, so I figured the

meatloaf would too, O well

I kind of came up with this last night on a whim. Came out AMAZING!

 

2 cups TVP

2 cups water

1/2 cup quick cooking oatmeal

1 tablespoon soy sauce

2 teaspoons EnerG egg replacer beaten with 2 tablespoons water

16 oz. can peas

14 oz. can corn

3 carrots grated

ketchup

 

Boil water, pour over TVP, when it's all absorbed its ready (took about 20 min

for me)

Mix all ingredients together and press firmly into a greased loaf pan. Cover top

liberally with

ketchup and bake at 375 degrees for 35- 40 minutes.

Textured Vegetable Protein. It's a dehydrated soy

product that comes in flakes. Very versitile, keeps

forever, and is super duper cheap!
