I should have a recipe in the files if not I will post one. It is a Cal Rose short grain rice plus a few steps to prepare it. The tofu pouches are sold at the Asian market. After you make the rice and it cools, you stuff the pouches and sprinkle a few toasted brown or black sesame seeds on top. Many places don't use the sesame seeds but believe me they add to the flavor. I'll check for the sushi rice recipe and if I don't see it, I will post one for you. They are easy to prepare. I try not to buy them out because I don't know if the sushi chef is using the same board and knife he cuts raw fish on. I have seen this done in the past.
