Guest guest
Yes, let us know because I'm not a vegan cookie baker. If I'm going to eat cookies I want a bunch of calories tossed them (:- ))))) D Amy <sandpiperhiker wrote: > How 'bout some cooky recipes? bars? chocolate chip? any cookies, or are you specifically seeking vegan cookies? Guest guest
Vegan cookies for me! Or at the very least, non-dairy. I'm fine with eggs, just not dairy. Guest guest
They can have eggs. Well, they can have eggs or butter, either one. 'Cause like I said, some things just won't work without the alchemy of the above. :>) Bron On 1/19/06, Donnalilacflower <thelilacflower wrote: > > Yes, let us know because I'm not a vegan cookie baker. Guest guest
These are great! I think it is the cardamom that makes them distinctive: Chocolate Drops Makes 3 dozen, Egg and dairy-free From “Vegetarian Times” magazine, December 2000 Very dark and chocolaty, these cookies are remarkably low in fat. 1 cup walnuts (6 oz.) ¾ cup unbleached all-purpose flour ¾ cup whole wheat pastry flour 2 tsp. baking powder ¾ tsp. ground cardamom ½ tsp. salt 1 cup pure maple syrup ¾ cup unsweetened cocoa powder ¾ cup vegetable oil ½ cup soy milk 1 Tbs. Vanilla extract 2 tsp. ground flax seeds ½ cup dairy-free semi-sweet chocolate chips Preheat oven to 350 degrees F. Spread walnuts on baking sheet and bake until lightly toasted, 8 to 10 minutes. Remove from oven, cool slightly and chop coarsely; set aside. Lightly brush three baking sheets with oil or line with parchment paper; set aside. In large bowl, mix both flours, baking powder, cardamom and salt; set aside. In food processor, combine maple syrup, cocoa, oil soy milk, vanilla, and flax seeds and process until well-blended. Add maple mixture to flour mixture and stir until well-blended. Stir in chocolate chips and chopped walnuts. Drop by level tablespoonfuls onto prepared baking sheets, spacing about 2 inches apart. Bake until set, about 15 minutes. Transer cookies to wire rack to cool. from Maida Citizens for Pets in Condos, http://www.petsincondos.org South Florida Vegetarian Events, http://www.soflavegevents.net
