Hello all,

 

As the outdoor cooking season is upon us

I was wondering what your thoughts were in regards to

cooking food in Aluminum foil? Although the

convenience appeals to me as well as the marinate

staying with the veggies (as opposed to a grill wok) I

am vaguely troubled by the thought of cooking with it.

Am I being paranoid? Do you use it to ccok?

Last summer I started to have misgivings about cooking with aluminum foil

and slowly started to phase it out. I no longer use it to cover dishes that

are baking in the oven either-a real annoyance since my son broke the lid to

my large baking dish. Now, whenever I eat out, I can really taste the

difference if a food has been prepared in AF. I have no info/evidence to

back up this choice. Just seemed to make sense to me-and now it just tastes

so much better. It would be nice if there were a convenient alternative

though.

Hi Fran,

 

I can't comment much on the health issues related to cooking with foil.

I've seen a lot of " worry pieces " , but not much real science on the issue

(but I haven't searched for it). Certainly it may be problematic. I do

have another reason to not use foil - environmental. Producing aluminum

foil is Extremely resource intensive, so in order to grill your corn (or

whatever) you are consuming a lot of petroleum and other products. Perhaps

reusing foil could be acceptable - but if you can get away from it

altogether that would be great. I have used water-soaked corn husks to wrap

things in, eventually it will dry out and burn, but most of the foods I'm

making are done by then. Perhaps there are other good alternatives out

there? I haven't purchased a box of foil in years, and find that I can get

by without it.

I heard a lot about a link in between cooking with foil and using deodorants

with it and alzheimer . I will try to find out more.

The only problem I know about (having read it in a

cooking book somewhere) is that you should not use

aluminum foil with tomatoes and tomato sauces. The

acidity in the tomatoes mixes with the aluminum foil

and is absorbed into the food.

 

What I use instead is parchment paper. It is a little

harder to work with because you can't form it around

your pan like you can with aluminum foil. But it comes

in environmentally friendly versions; I get mine at

the health food store. I think it can be used in

temperatures as high as 600 degrees (but check the

box). I haven't used it on the grill so I am not sure

if that would work. You'd probably have to check your

grill temperature before placing it down.

 

I know that Vegetarian Times isn't the greatest at

this time, however, previous summer issues (last year

or the year before) had suggestions about grilling

veggies. They may have previous issues online or at

your library.

Ingestion of aluminum is linked with Alzheimers Disease. So the

concern would be if the aluminum leaches onto the food it is wrapped

around. There may be other concerns but this is the one I know of.

Does it leach? I have no idea?

in back to eden there is an article which states the poisonous effects of

cooking with aliminum pots, pans and foil. I avoid aluminum foil like the

plague...

I recollect hearing concerns re cooking with aluminum pans & Alzheimers years

back. However, I also remember that scientists were never able to confirm

this. I believe that they did some studies on aluminum & Alzheimers & came up

with no connection.
