On a happy note, ( happy birthday that is. ) i would like to share the

o/l veg and vegan version of the organic dirt cake i made for my

significant other's very young 24. Make this the night before..really

good with veggie omelettes or tofu scramblers & hashbrowns and fruit

salad!!

o/l veg dirt cake:

3 packages of Oetkers organics chocolate pudding

16 oz. organic heavy whipping cream, and 4 Tbs brown rice

syrup

2 lbs ( 2 packages ) Newman's O's or other organic oreos

one package fruit juice flavored gelatin free gummy worms

Vegan:

3 packages mori nu pudding mix & 3 packs soft tofu

16 oz. non dairy whipped topping ( prefferably organic...but

i'm not sure who makes any ) 2 Lbs Newman's " tops and bottoms " ( i

think they are vegan, they are creamless at least) or other vegan oreo

type or chocolate " dirt " type cookies

same gummy worms

one clean plastic flower pot. some silk flowers, or cut flowers with

waxed paper or foil around the stems.

Beat cream and sweetner ( or not :) chill

cook pudding, and chill

crush cookies

some people make a cookie crust , i prefer layering on top of pudding

fold cooled pudding and chilled whip together, spoon half into pot, add

some worms

cookie layer

pudding layer with worms, rest of cookies, worms sticking out

add beeswax or other birthday candles; hide under flowers

chill overnight

watch birthday person and everyone else devour this " cake " !! ( serve

with clean trowel)

N'Joy!!!

Love,

Natalie Joy & her boys

The dirt cake sounds yummy! I had great success making a soy ice

cream cake last week and thought you might be interested (its the

dirt cake and the ice cream cake that my kids miss)

I bought two containers of Soy Delicious ice cream (we used the

peanut butter chocolate and vanilla) and I package of Mi-Del

chocolate snaps. Let the ice cream soften at room temperature

while you get the other things together (you just want it

malleable not liquid)

I let my 4 yr old pummel the bag of chocolate snaps to make crumbs

(yes they did burst open so you may want to monitor this closely

or do it in a food processor.)

Either line a container (I used a round mixing bowl) with plastic

wrap or lightly oil it (I oiled it and it had to sit at room temp

a few minutes to release. A friend tells me its easier with the

plastic wrap.)

Put one container of Soy Delicious in and use a rubber scraper to

push it down. Then sprinkle half of the chocolate crumbs. Spread

the second container of Soy Delicious. Sprinkle the remaining

chocolate crumbs and press them in with rubber scraper. Pop it in

the freezer for at least an hour. When your ready to serve,

invert your container onto a serving plate and you have a two

layer ice cream cake with chocolate crumbs in the center and on

the bottom.

Actually Newmans O's are vegan even with the " cream " filling.
