kindergarten lunches

Hello everyone!

 

I am new to the boards, we are a family of 4 all

vegetarian. I am having a problem with coming up with

ideas for my 5 year old daughters lunches. I think

she is already getting tired of the old stand by PB & J

and cold veggie dogs...I have a hard time getting her

to try new things but usually when I can get her to

try something new she usually ends up liking it. If

anyone has any suggestions I would greatly appreciate

it. We also need some healthy snack ideas to send

with her too!!

I have a few yrs. behind me from packing snacks and lunches. My son is seven

now and goes to public school.

Lunches: hummus and veggies( carrots, gr. beans, broccoli, celery), chips or

pita bread; other bean spreads, white bean or fava bean are favorites; baked

or BBQ tofu, tempeh cutlets or bite size pieces, tofu no egg salad, norimake

rolls( veg sushi you can use sweet brown rice and all sorts of veggies);

avocado pieces or guacamole; we do use veggie slices that resemble cold cuts in

all

flavors as sandwhiches; soups of all kinds in a wide mouth thermos; pasta in

the thermos, and pasta salad, grain salads.

Snacks: All sorts of fruits, in the winter, dried or dehydrated fruits and

veggies, corn chips, rice crackers with soy cheese, applesauce or other fruit

sauces, rice cakes, homemade granola bars, trail mix, just plain roasted nori,

fruit leather, sesame bars, tofu jerkey or seitan jerky, all of the vegan

snacks from Robert's Gormet-love Veggie Booty and Tings

Those should give you a good start.

My almost 5 yr old like " gluten sandwiches " . We slice seitan really thin &

put it on bread w/ shredded carrots & melted cheese or soy cheese & then make

it into a sandwich. I put an ice pack in her lunch box so it is cold by lunch

time, but the melted cheese kind of sticks it all together.

New lunch ideas: How about hummus. We sometimes vary the hummus with a few

tablespoonfuls of either peanut butter, chopped olives, celery or carrots.

Also, the hummus does not need to be between bread slices. Pack some crackers

or

raw carrots, celery, etc.. for the child to dip into the hummus.

Try Gardenburgers cut into small pieces, or strips of baked tofu, sauteed in a

little oil and then packed when cool. I also have sent soy nut butter

sandwiches and small containers of pasta salad or soy macaroni and cheese. I

also always send fresh fruit and some sort of vegetable, like strips of red

pepper or edamame beans, which my son loves. If your daughter eats dairy, try

the Danimals yogurt drinks or the Stonyfield Farms organic squeeze yogurt.

I often heat up food in the am and put it in a thermos in my sons'

lunchboxes. Sometimes I send leftovers from what I cooked the night before

for dinner, other times I'll quickly make something. Obviously fresh

ingredients are better than frozen or canned, but some things that can be

made in a pinch are:

 

frozen peas sautéed in a bit of olive oil and garlic powder

canned chickpeas sautéed in a bit of olive oil and cumin

canned chickpeas and tomatoes sautéed in olive oil and basil

quesadillas (with refried beans and whatever veggies are handy) - can use

vegan " cheese "

 

there are tons of other variations -- black beans, kidney beans, etc. I try

to keep some cooked rice, couscous, or pasta in the fridge at all times,

then I can mix this in with beans or veggies for a quick " entree. "

 

I also always have a big Rubbermaid container of fruit salad in the fridge.

I find that if the fruit is all cut up and ready to be eaten, my family eats

more fruit. So, I'll add a container of fruit salad to the lunch box.

Then, I'll round out the meal with whatever else is available (yogurt -- can

use the soy yogurt, raw veggies, some interesting bread -- maybe bagels cut

into little circles, applesauce, trail mix, etc.)

Hi Laurie,

How about roll up - take a whole wheat tortilla, spread it with your

favorite hummus, sprinkle on shredded carrots and sunflower seeds. Roll it

up and it makes a great alternative to PB & J.

 

You can also use a thermos to send hot soups/stews.

The other night, I took some extra firm tofu and made tofu " steaks " with

it, and my five year old LOOOVED it!! He told me that he usually hates

tofu. ( he has never said this before, but, whatever!!) I sliced the

tofu into 1/4 inch thick slabs and covered it in a mixture of 1/2 C.

unbleached flour, 1/2 C. blue corn meal, and about a tsp of each of

these: dill weed, rosemary, basil, celery salt, parsley, and garlic

salt. ( please use organic, most mainstream herbs and spices are highly

irradiated!! ) I covered the tofu in the mix twice and fried lightly in

olive oil( I suppose you could brush with oil & bake, too) We ate these

with corn on the cob and basmati rice with dirty garlic gravy because I

had a southern chef for a daddy and I like gravy!! ;) Then we had

them for lunch with toast the next day. We eat a local company's bread,

Natural Ovens, and they include a plethora of super healthy omega

threes, lots of vitamins and many whole grains and proteins, and some

times we just eat a lot of toast!! Also, try peanut (or any other nut

butter) honey balls, with powdered soy milk and sesame seeds, use crumbs

to thicken, for a high energy, high protein sweet treat!! I have found

that you can make pretty much any veggies and grains, rice, TVP, and

bread crumbs into patties and fry or bake them. We also really love to

make Quiche, I don't know how you feel about eggs, but you can make good

vegan veggie pies, too, and they are good as a cold slice!! Let me know

if you want my recipe for perfect pie crust, and also, tofu " chicken "

pot pie!!

Thanks for the great ideas!! Yes I would absolutely

love your recipe for the perfect pie crust and the
