Hey Everyone:

I am new to the list and was looking for suggestions on a good vegetarian

cookbook. Doesn't have to be vegan. Probably best if it isn't. I am trying

to make the transition from a meat-eater to a vegetarian and going without

eggs/milk as well might just be too big an adjustment to start with. I need

kid friendly recipes, have a 6 and a 4 year old. I really don't like to cook

much and often get into a rut of quick and easy convenience type foods. So I

also need recipes that are easy and simple to prepare. Chapters Bookstore is

having a 30% off on-line sale. Though I would much prefer to wander around

the actual store for a few hours looking at books I have a two month old as

well so on-line shopping probably works best right now. Any suggestions

would be most appreciated.

Moosewood Restaurant cooks at home has a number of fairly quick recipes. I

found that they took a little longer the first time I prepared them, but

after that I could make most of them in a half hour. My kids love the

couscous paella, coconut basmati rice, chickpeas, and a bunch of other

recipes from that cookbook.

In terms of ease and consistent results, my favorite would have to

be the Compassionate Cook. Its one of PETA's cookbooks and we

just love it.

Peace,

Katie

Lisa,

In response to your inquiry about vegetarian cookbooks, I can wholeheartedly

recommend The Peaceful Palate by Jennifer Raymond. This book was originally

self-published and available only in selected San Francisco-area bookstores, but

a more commercial edition is now offered by Amazon and also VRG, I believe. It

is vegan but the recipes are simple, delicious, and easy to make. Jennifer is a

wonderful cooking teacher whom I had the pleasure of meeting in the early 1990s

when I took her class. I own many veg*n cookbooks, but The Peaceful Palate is

the one I use the most -- my copy is falling apart but I don't know what I'd do

without it. Jennifer's skill and good sense, as well as her grace and

compassion, come through in every recipe.

Hi Lisa,

I love 150 Vegan Favorites by Jay Solomon. They are simple and delicious

recipes - most are one-pot type of meals. I also have many of my favorite

recipes on my website at: http://www.healthymomshealthyfamilies.com/ I have

a 6 & 3 year old AND I hated cooking before I became veg*n. Cooking is now

much less of a chore than it used to be - and I enjoy eating the food so

much, that I actully don't mind the cooking part.

A friend just picked up a new cookbook called " Vegan Planet " which looks

really great too by Robin Robertson.
