Guest guest Posted January 6, 2004 Report Share Posted January 6, 2004 I just found a great sounding recipe for " old fashioned herb fried chicken " where you dip the chicken in a mixture of egg whites, beer, and mustard and then coat with another mixture of flour, rolled oats, and herbs, then fry until done. Anybody know if thick slices of seitan would work as a substitute for the chicken in this recipe? Also, my husband is vegan, any suggestions on a substitute for the egg whites - I usually bake with N-ergy Egg Replacer but dont think that will work in this case. Thanks for any suggestions. As far as replacing the eggs, flax seeds in a little mini grinder, mixed with a little water works well for me. Guest guest Posted January 14, 2004 Report Share Posted January 14, 2004 Worthington makes canned Fri-Chik soy/grain nuggets that come packed in a kind of gravy that's good on it's own or as a flavoring for home made gravy. The nuggets are pretty juicy and when they come out of the can wet from gravy, they hold breadcrumbs or corn meal or flour for frying. I've made them deep fried, but they work very well pan fried in a tiny bit of oil, just to brown the breading; the nuggets are already cooked and only need warming. Worthington also makes a frozen veggie chicken substitute; it comes in a plastic tube, like sausage. Normally I slice it to cook with gravy, but it could be breaded and fried easily. -- Be kind.
