Hi, Diana-- I'm not sure it's really possible to have *no* carbs, but there are lots of *low*-carb dinners. Are there particular ingredients you would like to work with? I could foward on a few SBD recipes if you give me some general idea about what you like. I don't like cooking big elaborate meals, so I tend to rotate between a few tried-and-true staples: --Stir-fry with veggies and baked tofu or seitan (vary the ingredients/sauces to keep interesting) -- Bean/soy meat chili or soup -- Curry: chickpea, spinach, other veggies -- Big salads with beans -- Pizza made with Portobello mushrooms as the crust; lasagna with portobellos standing in for the noodles -- " Pasta " made from spaghetti squash with tomato sauce, sauteed veggies, soy " meatballs " , soy parmasean -- Scrambled tofu omelettes with soy sausage (I sometimes like to eat breakfast for dinner!) -- Lettuce wrap sandwiches with soy meats/soy cheese (butter leaf lettuce works well) -- PM snacks: nuts, avocado, hummus Hope this starts you off well... Guest guest Posted March 19, 2004 Report Share Posted March 19, 2004 The gravy I make is really simple - a pile of yeast, with enough boiling water whisked in to make a thick cream sort of sauce. Then I add about 1 TBSP of flaxseed oil per serving. (Sorry it's not real exact - I make up stuff as I go along.) You don't cook it at all, the boiling water provides all the heat you need, and if you're going to serve it later, wait to add the flaxseed oil until just before you serve. It's kind of nutty and cheesy, and my daughter and I eat it on pasta, veggies, potatoes, tofu, whatever. If I want to make the extra-healthy version, I put a bunch of turmeric in too (like a tsp per serving), which makes it look kind of like cheese sauce. With a toddler, I am just now becoming more concerned, especially since she is really picky.
