Guest guest Posted July 20, 2004 Report Share Posted July 20, 2004 I don't know if this counts or not because you still have to use egg replacer. 2 cups zucchini peeled and grated 1 cup vegan bread crumbs 1 teasp Old Bay seasoning Ener-G Egg Replacer (mix with water) 1 tablespoon vegeniase (or other vegan mayonaise) vegetable oil Mix all ingredients together. Form mixture into patties and roll in more bread crumbs. Bonnie Barker Recipes Editor www.VegFamily.com 1 15-oz can cannellini beans, drained & rinsed 1 Tablespoon lemon juice Egg replacer equivalent to 1 egg 1/3 cup bread crumbs 2 Tablespoons grated vegan parmesan cheese 1/2 Italian plum tomato, chopped finely 2 Tablespoons finely chopped celery 2 Tablespoons finely chopped green bell pepper 2 Tablespoons finely chopped onion 1/4 teaspoon garlic salt 1/4 teaspoon hot pepper sauce 1 teaspoon Italian seasoning 2 Tablespoons tartar sauce, if desired Mash beans in medium bowl. Add lemon juice and egg replacer; blend well. Add all remaining ingredients except tartar sauce; mix well. Shape into three 4-inch patties. Spray 12-inch skillet with nonstick cooking spray. Heat over medium-high heat until hot. Using pancake turner, transfer patties to skillet; cook 6 to 8 minutes or until thoroughly heated and lightly browned, turning once.
