Some are chain restaurants (Hobees, Country Gourmet, Fresh Choice, Whole Foods) and others are independent (Vegetarian House,). Most of the strictly veg. restaurants in the area are Asian or Indian. Many others places have very veg-friendly menus. I've never had a problem getting the food that I want after " tinkering " with the menu items. Try Fusion in West San Jose for some REALLY good Asian/Fusion food. If you are heading toward the coast, make a detour to Dharma's in Capitola. If you need more details, let me know.
