I think it was lard, of all things. It's possible that I'm remembering a different Jiffy mix, but it's definitely worth checking before you buy. So she was saying however big the jiffy box is that is how much cornmeal to use. She wasn't actually putting the jiffy in her food. Guest guest Posted October 28, 2004 Report Share Posted October 28, 2004 Hi Folks, I didn't get to make it to the grocery store to check on the size of the Jiffy Corn Bread mix last week when I wanted to due to strep throat running rampant among my five kids. Finally all of them went to school today and I was able to go. Yes, the Jiffy Cornbread mix has lard in it that's why I never use it and why I didn't list it in the original recipe. The recipe called for one package of Jiffy Cornbread Mix OR Self-Rising Cornmeal. It didn't give an amount for the cornmeal, but I'm thinking if you use an amount equal to what is in the Jiffy Cornbread Mix it'll be okay. The amount is 8.5 ounces, so roughly 1 Cup. I think I used a bit more - maybe 1.5 to 2 cups since I like my batter a bit thicker. I hope this helps. I want to make these this weekend but am still a little lost as what to use in the way of cornmeal. do I add something to it or can I just use regular meal? I am far from a culinary genius so I need a little help here. thx everyone!! does anyone have any good seitan or tofu recipes(that kids really like- obviously!!! lol) also- I wanted to thank everyone for being so nice and supportive about the dog I rescued and posting it here. Guest guest Posted November 1, 2004 Report Share Posted November 1, 2004 " Self-rising " when applied to flour or corn meal means the meal has baking powder and salt in it already, so you don't have to add that. With corn meal mix, it may also have some wheat flour mixed with the corn meal. If you have regular meal or flour and you want to make it into self-rising mix, I use this rule of thumb: Self-rising flour/cornmeal/pancake mix 1 cup flour [or corn meal, or whole wheat, or any combination] 1 teaspoon baking powder 1 teaspoon baking soda 1/4 teaspoon salt Optional for pancake mix: 1/4 cup powdered milk I mix up about 10 cups of whole wheat/buckwheat pancake mix using this recipe. You can buy self-rising cornmeal in most grocery stores. It's ususally right next to the regular cornmeal and costs about the same. I believe it's just cornmeal with baking powder already added. Theoretically you could make your own, but I don't know what the proportions would be. You can use regular cornmeal and just throw some baking powder in. I think about 1 tsp per cup ought to work fine. I didn't have any self-rising cornmeal onhand when I mad ethese so I used regular cornmeal. I also didn't have any baking powder so I just used an extra bit of Egg Replacer instead.
