how to cook collard greens, etc.

Hi everyone,

 

I have a pet iguana and they need calcium-rich greens

on a regular basis. I have been feeding him kale,

collard greens, and mustard greens for some time now,

and was thinking about how it would probably be a good

idea to prepare these for myself and my children as

well! Do these vegetables taste good? Being a

northerner, I have never eaten any of these, and I

have NO IDEA how to prepare them; does anyone have any

good recipies? Especially something that would be

palatable to children?

I love kale. I just blanch it in water brieflyand then saute it with a little

garlic. It is delicious.

I use them in a variety of ways:

 

steamed, plain or with seasononings/salt to your taste

 

In stir frys - chop and add liike you would broccoli (add Kale a little

sooner as it takes a bit longer to cook)

 

chopped and added to stews, soups and spagetti sauce.

 

You can also use them in casseroles or in place of spinach or other

greens in cooked recipes.

I make kale quite often. I just wash and chop the kale. Then saute a lot of

minced garlic in olive oil. Add the kale and saute some more. Then add some

veg. broth or water and Braggs Aminos or soy sauce to around 1/4 inch of

liquid in the bottom of the pan. Let this cook for around 10 minutes. Serve

over rice with baked tofu on the side, and some toasted garlic bread. My

kids will make a sandwich with all of it and eat it. They don't eat a great

deal of kale, but they eat some. You can also take the sauteed kale and add

it to mashed potatoes! Yum! You can do the same thing with any type of

greens, except spinach will cook much faster.

Shirley, greens are wonderful foods! My two boys love them. My daughter

does not! However, I still serve them often at our dinner. I used to just tear

them up before sauteeing over low heat, but now I stack the greens up

nicely, one upon the other, roll them somewhat tightly in to a cigar shape, and

slice into 1/4 inch slices. They come out in beautiful strands. Anyways, I

saute them over low heat in some olive oil. I sometimes add garlic and or salt

to taste. They are really delicous. FYI, kale is probably the strongest

tasting, so start with either spinach or swiss chard and the go to collard

Shirley,

We love all greens in our house. We also like beet greens, and dandelion

greens. Lacina kale is my favorite; and my son like the kale that has some

purple

around the edges. My husband cuts it up and puts it in stir fries in the wok

with tamari, garlic, and ginger, and sometimes onions. We also put greens in

the food processor with tofu when making lasagna, or stuffed shells. We have

thrown greens in with scrambled tofu for a weekend brunch.

Just wanted to mention that collard greens require a LOT more cooking

time than other greens. For those of us in our household, we prefer

any of the other greens to collards: if collards aren't sufficiently

cooked, we find them painful to digest.
