My name is Lisa and I have one daughter, Sierra (3) and we are very happy to be joining this group! I have been a vegetarian for 11 years this June and my daughter has always been.... For a long time I was the only vegetarian in my family until my sister Gina ( 14 now) became vegetarian (been 5 years) and recently my brother David, his girlfriend Laura, daughter Rain ( 7) and My mother have converted about 6mo's ago. I was very thrilled about there new way of living. I am really excited to meet you all and be apart of something I believe so strong in. ~ Lisa PS - Does anyone have suggestions on cold lunches? My daughter goes to a montessori school and they can't heat up any lunches she brings....and unfortunately the hot lunches they offer have meat! I feel bad that she usually brings similar meals week to week.... jpetrusplus <jen.petrus wrote: I like VeganRella cheddar flavor for eating with crackers and mustard or making a grilled cheese sandwich. But, the tofutti mozzarella slices do work well for pizza (although we usually just make pizza without any cheese.) My favorite cheese sub is a spread I make, I put it together by trial and error and combining several other recipes: cashew cheese spread in a blender, combine 1/4 cup lemon juice, 1/4 cup water, 1/2 a red bell pepper (or the whole thing if it's small), 1/4 cup nutritional yeast flakes, 1/2 tsp salt, 1 or 2 TB chopped onion, and 1/4 tsp garlic granules. Whir this together, then with the blender running add a few raw cashews at a time through the top hole until you have added almost 2 cups and the mixture is getting thick. It will be a little on the runny side but after going in the fridge for a bit will be very thick and spreadable. Great on sandwiches or rice cakes or crackers or as dip for pretzels or apples or veggies. DO NOT try this with a wimpy blender!!! I have burned out the motors on several blenders. Now I have a super heavy duty waring and it can just handle this. I may have to get a vitamix one day... Guest guest
my daughter eats lots of hummus pita pockets.. i try to stick veggies in with with it like carrots and pickles. Or broccoli. Whatever veggies you can get fine enough to go in there. She also eats the smartdeli bologna in pockets.. she doesn't eat sliced bread at all. You can put some vegenaise on there with the slices. There are a few flavours of smartdeli slices but my daughter really only likes the bologna ones. Another option is making some dough and putting smart dogs in it. I cut up a couple of smartdogs in half and bake about 8 of them at a time. She normally eats about 3 or 4 at a time. So 8 halves is enough for about 2 meals and maybe a snack. And these can be eaten cold and kept in a lunchbox. renee --- lisa castillo <lisarcastillo wrote: > > I wanted to introduce myself as I have'nt had an > oppurtunity..... > My name is Lisa and I have one daughter, Sierra (3) > and we are very happy to be joining this group! Guest guest
Hi Lisa I have a very similar situation, my son is about 15 mon old and his dc cannot heat his food either. So i try to make things that might be ok to eat at room temp. things that i make for him are : 1. wheat based Rotis (like tortilla): i sometime put veggies in tht tortilla batter (it; grind veggies like spinach, or carrot and and them mix it with wheat to make the batter for the roti) 2. Rice cakes (we call them idly) and again try to mix some veggies in it. 3. Noodles and/or pasta 4. Bread sandwich (with lots of veggie in them, cooked or raw veggie) (all these things sound bald and not so tasty but i try to add some Indian spice to them to make if you want i can send you recipes. Will it be ok to upload our recipes on to this groups database (/database)? Guest guest
Hi, Besides the obvious nut butter and jelly (Trader Joes sells with no sugar), Hummus spread on a flour tortilla and rolled up tight, or any other spread on the tortilla and of course any flavor tortilla. If she likes tomatoes, a sliced tomato sandwich on bread with a smidge of vegan mayo and sprinkle with salt & pepper or my favorite Spike seasoning. Celery with peanut butter or ants on a log, add raisins on top of the peanut butter., Can't think of anything else right now. My son is vegan and 17 yrs, he has grown tired of all of the above, but it lasted for a long time. Guest guest
The Vegetarian Lunchbasket by Linda Haynes is an excellent book full of portable options for lunches. While all of the recipes aren't totally vegan (she uses some dairy, but no eggs) it's pretty easy to convert. Also, she suggests using a thermos, and then you can actually pack a hot lunch, which opens all kinds of new possibilities. I wouldn't do so if it would be sitting around much more than 3 hours, though. Hope that helps! Guest guest
I love that book. It was one of the first in my vegetarian cookbook collection. Another good one for lunches is " The Natural Luchbox " by Judy Brown.
