Vegan Wedding Cake

Hi,

I am getting married in late August and I haven't been able to find a cake yet.

I need

something to serve about 80 people, simple, delicious, and of course, vegan. I

live on the

North Shore in Massachusetts but I'm willing to travel for the right cake (and

right price.)

I'm having the Organic Garden in Beverly cater my reception but they haven't

found any

leads for the cake either. Does anyone have any suggestions? Thanks.

I haven't actually tried it, but I hear Sticky Fingers Bakery in DC is

great. It has a website, and I think they ship things, but I'm not sure on

pricing etc. They're all vegan, and I'm sure if they can't do it, they'd

have some more suggestions for you. HTH!!

Are there any cooking/chef schools near you? When I got married, I went to

the local college which did have a cooking school and hired a gal who did

cakes, etc... while she was going a student. She had a portfolio which was

pretty impressive and was willing to learn how to do a vegan cake. She

wasn't vegan, however I told her about egg replacers and gave her recipes

she practiced on until she was comfortable with one of them. She actually

liked learning about this because then she was able to expand her knowledge

as well as her clientele.

Congratulations on your upcoming wedding. Have you tried local vegetarian

restaurants? They might be able to work with you or they may have a chef that

will make it on the side. You might also want to inquire at places that make

non-vegan cakes and ask if they can make a vegan cake for you. Good luck. If

you find a site on line post it, I'd love to know where to find cakes too.

Mandy,

 

I don't know if a recipe would be of any help for your wedding cake, but the

carrot cake recipe in The Peaceful Palate, Jennifer Raymond's vegan cookbook, is

outstandingly exceptional. The recipe makes a normal sized cake but could

probably be adapted easily by your caterer. Let me know if you would like the

recipe.

Why can't the caterer just make it following a normal

wedding cake recipe and just use EnerG egg replacer

and a vegan icing (I'm told several icings are vegan).
