New & intro

Hello everyone,

I am a fairly new member to the group, but not so new to being a

veggie. My family lives in northern Idaho and we have three little

boys--one is almost 2 1/2 and the two youngest are 7 months.

 

My husband and I were both raised by vegetarian parents, so our kids

are third generation vegetarians! We have recently started to follow

Dr. Fuhrman's " Eat to Live " plan (www.drfuhrman.com) and are somewhere

between lacto-vegetarians and vegans. We don't stock dairy in the house

and don't eat out really, but I still give in to occasional urges. Eat

To Live emphasizes a strong focus on nutrient-dense, whole foods, so

I'm working away from the processed soy products and towards better

snacks for my toddler. The babies are clean slates, so they get to be

basically vegan from the get-go.

 

This morning, dh made rice milk in the VitaMix and it was a hit. This

way, we can just make rice milk (or the like) rather than stocking soy

milk. I also blend up the babies' foods, pretty much at each meal they

eat. They're still working on pureed stuff or gnawing on the mesh

baggies, but I am eager to get to do finger foods with them as soon as

they are ready.

 

This seems like a great board and I am excited to get to learn more

from the members here! If there is ANYone in my part of the world, I

would love to chat and maybe meet up--I haven't met any veg*an families

here and only one vegan student. Quite a change from my old life in

Santa Cruz! :~)

Hi, Kirsten! When I was new to the group and introduced myself, one

nice person posted a " welcome " to me. So... Welcome to you! Glad to

have you share with us!

 

How interesting that you and your husband both were raised by

vegetarians! I'm so envious! Good for you and for your children!

Welcome Kirsten! Hey, I just inherited a VitaMix and I was wondering how I would

go about making rice milk. Do you have a recipe?

Rice Milk

Yield: 2 cups (480 mL)

Processing Time: 2-3 minutes

Speed: Variable to High

 

1/2 cup (120 mL) brown rice, cooked

2 cups (480 mL) water

1/2 to 1 tablespoon brown sugar or other sweetener , to taste

 

Place all ingredients in Vita-Mix container in order listed. Secure

two-part lid. Select VARIABLE, speed #1. Turn on machine and quickly

increase speed to #10; then to HIGH. Run for 2-3 minutes or until

smooth. Store in refrigerator. Shake well before using.

 

Add teaspoon of vanilla if desired.

It's easy and fast and makes a yummy drink. Zane, our toddler, loves it

alone or on oatmeal or cereal. As long as we have rice handy, it's a

breeze. You will LOVE your VitaMix--I think most of their recipes are

online, so check out everything you can do with it!
