Soy Milk in Puddings

I make puddings, both instant and scratch with soymilk frequently. I

also had the problem of it not thickening until I read something about

the amino acids in soy causing this problem.

 

Solution: Either use 1/2 the amount of soymilk called for, or, if you

are making pudding from scratch, double the amount of cornstarch or

whatever you're using to thicken it. If the finished product is lumpy,

pour through a strainer. Works every time!

What about rice milk or some of those nut milks, like almond?

Don't really know...I imagine they would work just fine, but I stick

to soymilk. I make my own so it's way cheaper than anything else.
