ALl other times I've been thinking about it and putting this or that together. But today I just forgot about it and wasnt sure to make when the time came. I kind of paniced at first but then I thought, " Ok, just make what you would USUALLY make minus the meat " My husband works evenings most of the time so I do not really have to worry about cooking supper for something he would like. Although he actually is on a new diet also for his high blood pressure and has been eating a lot of fruits, salads, etc. My boys both love white rice so I made white rice with Spanish Black Beans over it that I learned how to make from my Spanish Mama. Green Peas and cut up Cantalope, watermelon and grapes. Milk to drink (raw milk from the neighbors Dairy Cow) Was that somewhat a good meal? A couple other quick and easy dinners: my kids love steamed tofu (the firm kind) and veggies and Quesidallas (sp) w/ just cheese (or vegan cheese) and black beans) If you are not going vegan yet - eggs can be a good protein source at dinner, we do hard boiled or fry an egg in a hole in a piece of bread. Guest guest Posted October 20, 2005 Report Share Posted October 20, 2005 Roberta, Sounds like you did a great job! I rarely plan our suppers more than an hour in advance, but I'd sure like to. The only thing I'd change is switch your white rice for brown rice. So much more good stuff (B vitamins etc) in the brown rice. And it's really got a better texture, being more chewy instead of just a filler. It took a little while to get my family hooked on the whole grains, but it really is worth it. Now white rice (and white bread, and white pasta, etc) just don't taste right to us anymore. Hey, would you mind sharing that Spanish Black Beans recipe? I put Yves ground round, water, hain gravy mix, whole wheat elbow macaroni and a pkg of shredded follow my heart vegan cheese in a pan and cook until the pasta is done. My oldest wouldn't eat it because she hates corn (wierd kid) but she can have chick free patties or nuggets if I make it for everyone else. If I do not have the mix, I will sauté chopped onion with the Yves, the add a cup or so of veggie broth. I added enough water to keep it all moist and it turned out delicious. Thanks!
