When i used to eat meat, I loved the firmer pepperoni and my daughters loved crisp bacon. We do not wish to eat anymore dead animals so I am attempting to duplicate them using seitan or tofu or something else i may not know about. I've never tried to make something like that for myself. The pepperoni is too spicy for my daughter she says it makes her mouth burn. She doesn't know anything about what pepperoni should taste like though she was used to eating the Morningstar farms breakfast strips (has egg whites) and prefers those to the vegan smartbacon I buy now. Guest guest Posted November 13, 2005 Report Share Posted November 13, 2005 Morningstar makes a fake bacon strip and sausage products; in the freezer section of the grocery, usually near waffles.Those are the best I've seen. Bacon bits for salads are usually TVP chunks with yeast extract to simulate the bacon flavor; they can be found in bulk food bins at some health food stores. Some grocery stores have veggie meat substitutes among the fresh vegetables, near tofu and cilantro. Gimme Lean sausage is good, as were all the Melissa's products I've tried. I bet if you slice them really thinly you could replicate the pepperoni idea. Actually, I think the yves pepperoni is great! So does my omni husband, mom, and grandmother. I've fooled my inlaws with it in an Italian salad and on on pizza. The morningstar farms bacon is also good. Try different ways of cooking the bacon, however, because each cooking method will yield different results. Guest guest Posted November 13, 2005 Report Share Posted November 13, 2005 Just an additional side note about the Yves Pepperoni... They won't sizzle in the oven like regular pepperoni. They are much lower in fat. I have brushed them w/ olive oil before placing them on the pizza to help them cook. This adds more fat, of course, but it's definitely healthier than the other option! Last night I tried the recipe for pepperoni found in the " Vegan Vittles " cookbook. Turned out not too bad, although I think the spices need to be tweaked a little. The texture is pretty good too. If you do come across a real good recipe, please feel free to send it on in. It'd be nice to just try something else to see if it is less spicy for my daughter. Maybe you could talk to the health food stores if your grocery stores don't carry it. They could probably get it in I'm sure. Or some online place like veganessentials.com has a vegan pepperoni log that you could buy.
