Recipe: Tofu bacon

I haven't tried this recipe, but here you go...

 

Yields 6 slices

 

12 oz. firm or extra firm tofu

vegetable oil for frying

1 tablespoon liquid smoke

salt to taste

soy sauce (or Bragg's liquid aminos!) to taste

 

Prep:

* slice tofu into 1/8 to 1/4-inch slices

* cover the bottom of frying pan w/thin layer of oil and place tofu

slices on top

* sprinkle tofu slices with liquid smoke and salt, and saute over

medium heat until golden brown

* flip slices and brown on other side for fifteen minutes

* once browned, sprinkle slices with soy or Bragg's and saute for 5

more minutes

* serve hot

This does taste like bacon but I would let it marinade for a little bit. I have

a recipe that is basically the same but he tofu is sliced much thinner. I think

for 1/2 lb of tofu you should get about 24 slices. You probably would need a

mandoline for that.

Our favorite veggie bacon recipe comes from the Compassionate Cook. I'm not

certain if we follow it to the letter but that's the original source of it.

 

!/2 cup tamari (recently I've tried 1/4 cup tamari and 1/4 cup Bragg's)

1 Tbs maple syrup

1 Tbs nutritional yeast

 

Whisk the above together. Slice a block of tofu into about 24 pieces (this is

your choice, thinner slices make crispier " bacon " thicker slices make chewier

bacon.) Marinate overnight for best flavor. I fry mine on a cast iron skillet

until crispy. I freeze the leftover tamari mixture to use another time.

Carol, your way sounds more " baconish " . The recipe seems to need a

bit of tweeking, which is why I haven't tried it. I would also drain

the tofu completely, freeze it, thaw it and then marinate it. I

think it would improve the texture and give it that desired chewiness.

Wow! That sounds just about perfect! I'll have to try that. Right now I

have some Yves veggie bacon strips but I would love to make my own with

tofu.
