Guest guest Posted November 8, 2000 Report Share Posted November 8, 2000 * Exported from MasterCook * Tomato-Ricotta Omelet Recipe By :Paulette Mitchell Serving Size : 0 Preparation Time :0:00 Categories : Entrees Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- Herbed Tomato Sauce Ricotta Filling 1/4 cup part-skim ricotta cheese 1 tablespoon lowfat 1% milk 1 teaspoon fresh chopped parsley 1 teaspoon tarragon 1/4 teaspoon black pepper Garnish: sautéed pine nuts, fresh basil leaves, Parmesan cheese, or steamed asparagus tips -- optional In a small bowl, mix filling ingredients. Fill omelet with Ricotta Filing. Cover to heat for 1 or 2 minutes. Turn out onto serving dish. Top with Herbed Tomato Sauce; garnish. Variation: Substitute cottage cheese for all or part of the ricotta cheese; eliminate milk. Variations: This sauce is also delicious served warm on warm pasta, vegetables, or over a cheese omelet. Omit oil to reduce calories.
