Baked Mexican Rice (Vegetarian)

 

Recipe By : Recipes from the Pacific Rim by Marjie Lambert, pg. 19

Serving Size : 6 Preparation Time :0:00

Categories : Rice Vegetarian

 

Amount Measure Ingredient -- Preparation Method

-------- ------------ --------------------------------

3 cups cooked white rice

2 jalapeno chile peppers -- roasted, peeled, seeded

and chopped

1 cup corn

1 cup sour cream

1 cup Monterey jack cheese -- grated

2 tablespoons fresh cilantro -- chopped

2 tablespoons fresh parsley -- chopped

1/3 cup chopped green onions

 

Preheat the oven to 350 degrees F.

 

Combine all the ingredients. Put the mixture in an ungreased casserole

dish. Bake, uncovered, for 30 minutes.

Isn't today vegan day? What is up with this? Not trying to be mean but,

being vegan I look forward to Wednesday for all vegan recipes . . .

Katy,

 

I may be wrong, but I've always thought all days are *any* vegetarian and

also (in addition to any) Wed is Vegan...but not exclusively. If I'm

wrong, well, good...because we can all learn together what Vegan Wednesday is.

yep- that's what I thought.. but usually if you're looking for recipes- all

you need to do is ask and the great people on this list will flood you with

them.. so- anyone wanna send out some Vegan recipes for vegan wednesday for

Katy??

Oh, I have gotten plenty today!! Don't go to any extra trouble, I have more

than I could ever hope to cook at this point! The Thanksgiving stuff will

sure come in handy, thanks all!
