Guest guest Posted November 10, 2000 Report Share Posted November 10, 2000 * Exported from MasterCook * Noodles with Creamy Sesame Sauce Recipe By :Estrogen, The Natural Way - Nina Shandler Serving Size : 4 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 3 garlic cloves -- quartered 1 tablespoon tahini 1 tablespoon peanut butter 1 tablespoon tamari soy sauce 1/2 cup unsweetened soy milk 19 ounces silken tofu 12 ounces fresh Chinese noodles 2 tablespoons lime juice 2 tablespoons unhulled sesame seeds 2 tablespoons chopped fresh cilantro Place the garlic in a food processor with the S blade inserted. Mince. Add the tahini, peanut butter, tamari, soy milk, and tofu and process until smooth. Heat in a heavy-bottomed saucepan over medium heat without boiling. While the sauce is heating, bring 2 quarts of water to a boil. Add the noodles and cook for 3 to 5 minutes. Pour the sauce into a serving bowl; stir in the lime juice. Sprinkle the sesame seeds and cilantro over the sauce. Drain and rinse the noodles. Serve the sauce and noodles separately, ladling sauce over the noodles at the table.
