Simmer for 20 to 30 minutes, stirring occasionally, until the excess water is cooked off and the oil has separated. Season with salt and pepper to taste. The tomatoes will have broken down, but if you want a smooth sauce, pass it through a food mill or quickly puree it in a blender.
