I started making this, without the water, and it was liquid enough by far. Does it mention why the water's needed -- Oh! I am using MoriNu lite tofu. That's not a firm, but with all that olive oil... Speaking of that, I didn't have two kinds of olive oil, but I do have that delicious and fragrant rosemary oil, so I used some of that in this. I was trying to make a potato salad (which I've never made) and was concerned it was going to be boring. Not with this delicious Mayonnaise!!! I guess she figures everyone has it. I like to have all my ingredients listed so I can have them all out and ready -- just a minor irritation. Nope, it doesn't mention anything else about the water or why it's needed.
