Guest guest Posted November 20, 2000 Report Share Posted November 20, 2000 * Exported from MasterCook Mac * Tofu " Country Ham " and Red Eye Gravy Recipe By : Cookin' Southern Vegetarian Style, Ann Jackson p32 Serving Size : 3 Preparation Time :0:00 Categories : Soyfoods Sauces & Gravies Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1/4 cup tamari soy sauce 1/4 cup water 1 tablespoon dark miso 3 tablespoons toasted sesame oil 1 tablespoon dijon mustard 1 clove garlic -- pressed 1 pound firm tofu 3 tablespoons oil -- to 4 1 cup strong black coffee -- to 2 cups Also in Heart of the Home, Ann Jackson (1995) Combine the tamari, water, miso, oil, mustard, and garlic in a small bowl. At this point, depending on my mood, I might stir in about 1 or 2 teaspoons of any ONE of the following ingredients: horseradish, poppy seeds, chili powder, ginger, Pick-a-Peppa Sauce, ketchup, Old Bay Crab Seasoning, you get the picture. Stir this together in a measuring cup, and set aside to use as a marinade. Cut the tofu into cubes, and spread them in a shallow, non-metallic plate, like a glass pie plate. Pour the marinade over the tofu, and let sit for 2 hours or as long as you can. Heat the oil in a skillet, and carefully add the tofu with a slotted spoon so the oil won't splatter. Add a little of the marinade, and let cook on medium heat until most of the liquid has cooked away and all sides of the cubes are brown and crispy. Don't stir -- rather move them around or turn with a spatula. This does not need a lot of standing over -- best to just let it cook and turn it occasionally. When the tofu is well browned, remove it from the skillet and add the rest of the marinade. Let this come to a boil, and scrape any tofu off the bottom of the skillet. Add the coffee, return to a boil, and remove from the heat. Now you have redeye gravy. If it seems too soft, let it sit in a colander to drain. No, this is not exactly like country ham, but it is close -- hot, greasy, and salty -- YUM! This is excellent leftover in a cold biscuit for a sack lunch (that's a paper bag to you Yankees).
