Guest guest Posted November 22, 2000 Report Share Posted November 22, 2000 * Exported from MasterCook * Strawberry-Kiwi Torte Recipe By :Estrogen, The Natural Way Serving Size : 6 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- Glaze 1/3 cup all-fruit apricot jam 3 tablespoons frozen apple juice concentrate -- thawed 1/2 teaspoon unflavored gelatin Crust 2/3 cup flax seed 2/3 cup soy flour 1/2 cup chopped walnuts 1/3 cup all-fruit apricot jam Topping 8 ounces soft tofu 3 tablespoons all-fruit apricot jam 1 tablespoon vanilla extract 1/2 teaspoon lemon extract 1/2 teaspoon almond extract 1 pint fresh strawberries -- hulled and halved 1 kiwi fruit -- peeled and sliced Preheat the oven to 350F. To prepare the glaze, whisk the apricot jam and apple juice concentrate together. Sprinkle the gelatin over the mixture. While the gelatin is absorbed, prepare the crust and filling. To prepare the crust, grind the flaxseed in an electric coffee grinder 1/3 cup at a time. Pour the ground seeds into a small mixing bowl. Add the soy flour and nuts. Stir until well combined. Mix in the jam to form a dough. Turn into a 10-inch nonstick or oiled torte pan. Press evenly over the bottom and up the sides. Bake for 10 minutes, until lightly browned. Remove from the oven to cool. While the crust cools, prepare the topping: Place the tofu, jam, vanilla, lemon extract, and almond extract in a food processor with the S blade inserted. Process untill smooth. Taste. If needed, add more lemon or almond extract. Spread in a thin, even layer over the baked crust. Arrange the halved strawberries and sliced kiwi in concentric circles on top of the creamy filling. Heat the glaze until it is warm and the gelatin has dissolved. Spoon a light layer evenly over the fruit. Refrigerate until the glaze sets. Serve. Description: " Looks and tastes like summertime.
