Guest guest Posted November 23, 2000 Report Share Posted November 23, 2000 * Exported from MasterCook * Eggless Mayonnaise (vegan) Recipe By : from The Vegetarian Way by Virginia and Mark Messina Serving Size : 1 Preparation Time :0:00 Categories : Salad Dressings Condiments Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 package soft sliken tofu (10 1/2-ounce package) 1 tablespoon white vinegar 1 tablespoon fresh lemon juice 1/2 teaspoon Dijon mustard 1 tablespoon vegetable oil pinch salt Combine all the ingredients in a blender or food processor and blend until smooth. Refrigerate overnight to allow the flavors to develop. This mayonniase will keep for up to 2 weeks. Makes 1 1/4 cups - - - - - - - - - - - - - - - - - - NOTES : There are commercial eggless mayonnaise products available, but you can also make your own.
