Eggless Mayonnaise (vegan)

Amount Measure Ingredient -- Preparation Method

1 package soft sliken tofu (10 1/2-ounce package)

1 tablespoon white vinegar

1 tablespoon fresh lemon juice

1/2 teaspoon Dijon mustard

1 tablespoon vegetable oil

pinch salt

 

Combine all the ingredients in a blender or food processor and blend until

smooth. Refrigerate overnight to allow the flavors to develop. This mayonniase

will keep for up to 2 weeks.

 

Makes 1 1/4 cups

NOTES : There are commercial eggless mayonnaise products available, but you can

also make your own. For the smoothest texture, be sure to sue silken tofu.
