Sweet Herbal Vinaigrette

Amount Measure Ingredient -- Preparation Method

1/2 cup olive oil

1/2 cup water

1/4 cup red wine vinegar

2 tablespoons honey

2 teaspoons lemon juice

1 1/2 teaspoons chopped fresh oregano

1 teaspoon chopped fresh tarragon

1 teaspoon chopped fresh basil

1/2 teaspoon salt

1/4 teaspoon Dijon mustard

1/4 teaspoon ground black pepper

1 clove garlic -- minced or pressed

 

Makes about 11/4 cups.

 

Herbal vinaigrettes are not just great salad dressings; they also make good

marinades for almost any food destined for the grill. The touch of honey

in this recipe brings out the sweetness in the herbs.

 

In a blender, process all the ingredients at high speed until

frothy. Adjust salt to taste.
